We normally use maple hardwood lump but we add applewood, cherry and I have a bag of chipped Jack Daniels barrels

I use oak & maple lump. But I meant wood, not charcoal. Chips are good and the bourbon barrels sound neat. Don't really care for the taste of mesquite, so I avoid that.
