TBH that's what the bread machine is for. Next step up is Irish style soda bread. For me, doing kneading by hand is when I need therapy. Oh, not just the kneading - the punching down of the loaf is also good for letting off personal steam. And in the end, of course, BREAD FOR EATS!!!
