Ice cream crispie treat sandwiches. I've been making homemade ice cream lately, I will try this and report back with peoples reviews once I can get a hold of vegan marshmallows.

You'd have to make them and then eat them, no refreezing, bc the sugar in the mallows will get too hard, then draw in moisture from the air outside of the freezer and get slimy, but I still think it could work when eaten after being freshly sandwiched.
