The way you eat a chile relleno in L.A. is with a fork. It's a poblano stuffed with cheese then battered (like pancake batter with extra eggs in it.) Fried & served in a slightly sweet light reddish sauce. A lot of people eat beans and rice with little triangular scoops torn from a tortilla.
