Buttermilk and ranch have very similar acidities! Google says buttermilk is pH 4.4 to 4.8, and Ranch is 4.4. Ranch is basically buttermilk plus herbs and spices. I'd expect you to get pancakes that taste like garlic, onion, mustard, and dill. Possibly a bit thicker but within normal variation.
