There's been some good reporting in Boston Globe recently on why! (tldr: the scarcity of liquor licenses, which make it cost upwards of $600k to open a new restaurant that's it's drinks, therefore the only people who can afford to do so are hotels, well-capitalized chains, & folks with connections.)
