I have mixed feelings about this as someone that suffers multiple food sensitivities & cross-react to proteins my body “mistakes” for other foods. Proteins are complex. I know the scientists try to check for exactly this, but how do you think they even learned of cross-reactivity?

I'm no biologist, but as I understand it, the "natural" methods of plant breeding we've used for millenia involve rolling genetic dice and picking the outcomes we like. They can introduce all sorts of unintended changes. Crispr editing gives much more precise control, so should be far safer.
