Back when US goat and lamb consumption were at their nadirs, in the 1990s, lamb consumption per capita fell to about 0.8 pounds. During the same period, goat consumption per capita was 0.05 pounds. In 2022, lamb was at 1.07 pounds per capita, and goat had grown to about 0.2 pounds per capita.
