If you really want flavor, fire it up with a hardwood. Being in New England, I lean towards oak or maple, as they're what's most available, but every once in a while some fruitwood comes my way.

We normally use maple hardwood lump but we add applewood, cherry and I have a bag of chipped Jack Daniels barrels
