I use a "bookedge" scanner for this exact reason - it's the best option short of cutting the book or using a much more expensive setup (like a v-shaped sheet of glass pressing the book down with a camera system mounted above)

I would recommend scanning the book at 300 DPI minimum and uploading a PDF of the scan to the internet archive! They have some really great resources about best practices for uploading also
