They were fat because fat allowed them to get cut, bleed a lot and not get killed. Gladiators were very expensive property. Constantly shoveling carbs. Gladiators didn't have abs unless they were the sort of throw away gladiators meant to die, like war captives, rebellious slaves - kept starving.
