put back in the now very hot oven and roast just to get enough color on both sides it is up to u as the potato are already cooked at this stage it is just how much cronch u want if it does not seem to be hot enough u can broil them as well for a few minutes to get nice cronchy edges

put the cookie sheet on the stovetop or a flat surface and use something to smosh the potato down i just use a glass cup if the potato do not smosh they might need a little more cooking try not to over smosh the idea is to get cronchy edges while maintaining shape it is ok if some pieces fall off

if the potato look like this u are in good shape notice how they are getting wrinkly and browned now u can remove them and crank the oven up to 500 or so

roast the potato for about 20-30 minutes u can just check them and if the bottoms look like this then turn them and roast them for another 20-30 minutes until the skins start to look loose and browned

set your oven to around 375 and line a cookie sheet with foil to again help with easy cleanup and dump the potato onto the foil and kind of move them around to give them space now is the time to move them while they are cold

u just take some of those smol yukon gold potatoes and put them in a ziploc bag with some olive oil and a lot more salt than u think is healthy and toss them around until coated with salt and oil remember salt does not dissolve readily into oil so u will see the salt crystals
