I would like to sample Jewish-Mexican fusion cuisine.
(Mexican cuisine seems to fuse well with pretty much every other culture’s food, and of course, technically most all modern food IS Mexican fusion…)
Jews are the master fusionists, as they’ve had centuries as the local minority, in many different places, and have always created a fusion-dialect and fusion-cuisine. The Ashkenazic foods most of us think of as Jewish were fusions in some weak cuisines. The Sephardi were luckier in this regard.
This little NPR story on Mexican/Chinese fusion in Mexicali has stayed with me for a decade. I still haven’t gotten down there to try it but it’s very much on my list.
