I also make a similar stylistic difference. Grey is dignified, Gray is drab & awful.

I told my editor that if she made me use “gray” (I was already getting a dispensation for other Brit spellings because I was writing a Regency) I was going back and changing my heroine’s eyes to green because they were NOT gray
