Ubuntu is friendly, poke around and see which desktop you like the best and pick your version from there. You can set it up to run on a USB stick and see if you like it. I'm a fan of MATE but XFCE is a popular choice for new users. I don't really recommend the default Ubuntu desktop, but ymmv.
