This is one of a few special brews I make for friends at their request. I'm very proud of this particular recipe. I was given a tough set of desires for this brew and my friend is happy with the results. This beer is also a contest winner and strikes a good balance between older and newer hops.

Almost harvest time at my friend's vineyard and my Vintner's Ale, made with Texas grown Pilsner malt and dry hopped with Mosaic and Northern Brewer is peaking. I made enough to share with the harvest crew. This year's brew is lighter than last year's (Last year's is pictured in the wine glass).

My dad was a biochemist, and even though he's gone now, I feel the urge to ask him questions when I brew beer or need to adjust my water chemistry. My sister is a Physician Assistant and everyone in my family will call her for even the slightest medical question.

It takes a little work and planning ahead, but it's worth it if you end up brewing several batches. That and the yeast is used to the fermenter environment and takes off like a rocket.

It's really fantastic yeast. Now that I'm brewing 10 gallons, the cost works out with a starter. It's also pretty solid for several generations and rinses nicely.

Beer by color. 😂 My daughter wanted to make an "Orange" beer. I made an Amber version of a Irish(ish) Red that I make with Pale and Munich malt, Fuggles, and fermented with Irish Ale yeast Cold conditioned similar to an Alt. The original I called "The Irish Pfennig." This one is "Talia's Penny."

Wish I could figure out a way for you to try the beer I make for my wife. It's a perfect beer for non hopheads. Wheat, barley, and Golden Naked Oats with just enough hops to keep it from tasting sickly sweet.

I like a good IPA. But it has to be good and well built. Too many brewers try to hide their flaws with hops and call it IPA instead of working to make better beers.

Well, it's definitely a way, for sure. I think there is something to be said with experimenting with new and unusual ingredients. It's just something that personally doesn't work for me. I like some additions (Molasses, candy sugar, vanilla) but there are so many fascinating all malt beers to me.

I still don't get the allure of adding weird things into beer to make weird beer. It just doesn't compute for me as someone who learned to drink beer on the streets of Düsseldorf and the neighboring villages.

And by orange beer, I definitely mean the color and not the fruit. A mix of local pale ale malt, Munich malt, and a bit of Caramel 40, and fermented with Irish Ale yeast.

It's interesting, but I'm more into brewing beers with more local emphasis like using local grains, local hops, etc. Ancient Egypt is little out of my region. Of course, I have an eight year old assistant brewer, so we brew by color these days. Saturday we are making "orange beer."

This is true, and probably why I've gravitated to blonde and brown ales, albeit for different malt flavors. I'm especially loving some of the more subtle bready, biscuity, and flowery flavors from well made blonde ales that aren't masked by hoppy bitterness and hoppy flavors.

It's interesting to me that more people don't do more step mashing. I don't find it necessary for saccharification, but it seems my beers come out better when I step. Maybe I'm just stubborn and set in my ways though.

Serious questions from an amateur to a pro: Are multiple rests, or even a protein rest prior to a sac rest resource intensive enough to omit? Or what might be considered a frantic drop in temp from boil to pitch? Other than that, Irish moss is all I ever use for fining. Am I missing something?

Correct. I'm actually very surprised at the state of a lot of craft beers. Clarity is a challenge, for sure, but I feel like a lot of unnecessary shortcuts are being taken in the name of saving time in the short term. Maybe I'm not understanding scale, though.
