I'm not familiar with the new Vittoria glue, but I will point out that water-based paints and adhesives do not dissolve in water once cured. Bigger issue for gluing cx tires in 2024 is where you're sourcing tape, assuming you're gluing & taping, and how that tape interacts with this glue.

Hmmm I wasn't going to tape. This is for a hillclimb bike so not a lot of side loading, and almost entirely on smooth pavement. There are a couple of dirt sections on some of the BUMPS climbs maybe? I forget.
