I’ve said this before but tofu + basil pesto is a combination that’s way better than it has any right to be. I’d go so far as to say for a pesto pasta I’d take tofu over any meat option

Other people could probably do like shrimp or scallops better but tofu has the advantage of being more forgiving to mediocre chefs

Yes! Tofu also makes a great saag paneer if you want vegan Indian food.
