I find the categorisation confusing. Pasta is not, but instant noodles are. When it says cookies are, does that mean only prepackaged, or ones I make at home? What if i make tofu at home, is that also ultraprocessed?

Yes. You're cooking soybeans, grinding them to a liquid state, adding a curdling substance, and then expelling excess liquid during compaction. The home process is identical to the industrial in all but scale, so yes, homemade tofu is ultra-processed.
