I currently edit (& write) in Scrivener, but I tend to edit better on paper so I’ve been considering the ReMarkable. Does it change the document text based on your edits? I know little about how it works in detail.

No, not the way I use it at least. I make a PDF and scribble notes, then manually input changes into the doc. I used to do it in paper, and this seems to work just as well.
