That’s neat! My hippie parents made all sorts of things with lots of vegetables but somehow we flew under the parsnip radar. Maybe a regional thing? I learned about rhubarb from Midwestern friends later too.

totally could be regional! the farm near my auntie grows them for restaurants, so we just buy directly from them. it's like 1$ a lb, so for me it's cost effective to just find a recipe I like.
