I think Blender’s “problem” is that it does sooooo much that it’s just completely overwhelming to learn. I am getting there with it but it’s so all-in-one that even starting is a bit hard to manage

Yeah, but it's still so much better than it was and you can genuinely do real ass good work with it. But god stuff like say "baking a texture" it's like... uh... was I supposed to... intuit that?? somehow?????

Absolutely, I keep meaning to learn but theres just so many buttons and hotkeys (that often don't even have an associated button somewhere sane) I get totally put off
