I've been burnt out for almost two years now. I genuinely feel like an underappreciated, stressed mom who can't even ask for five minutes to breathe without getting screamed at.

That’s horrible..I know what it’s like, had some jobs like that in the past, I hope there comes a time you can find someplace that isn’t ass, or become self employed.
