My feeling on this is that it's incredibly dependent on the bread you use, moreso than almost any other sandwich. Do you have a go-to or general suggestions/parameters, or am I alone in thinking the bread is make-or-break?

Okay so I definitely agree. My favorite store bread is this on a lightly toasted sourdough. My fav homemade is focaccia! I know the traditional is like a 120 grain whole wheat but I ate too much of that in childhood and it's a no go for me 😅
