Paella tip: 1. cook the seafood individually 2. cook the rice/fideos & place the cooked seafood on top toward the end. It is *very hard* to cook different types of seafood all at once w/ the carbs without overcooking the seafood! Big secret is make a hearty seafood broth b/c it flavors the carbs.
