I've still got a lot of Thai and holy that needs to be harvested next week. Not sure what the conventional wisdom is on making pesto with it? 🍽️
Gorgeous! I would not make pesto with those other basils—they are two whole different herbs in spite of their names. Holy basil is best dried as a tea. Thai basil is best fresh in Thai and Vietnamese food, but failing that you could freeze it.
Thai Basil pesto is good on salmon. Swap in roasted peanuts for the pine nuts. Use rice vinegar instead of lemon. A little red pepper, sesame oil and soy sauce.
I've found that basil keeps producing a lot longer if you keep it pinched off. Thai basil is okish for pesto, but if you've got enough of the Italian-style stuff, freezing it for later cooking sounds good.
afaik it is the only thing to do with it for preserving huge amounts but i am also ok with that. some orzo & pancetta and you got easy dinner any time!
