To me scaling etc is no match for the simple fact that it was luxury larping which in and of itself is untested and they couldn’t follow through to spec. Team up with 4 seasons or Aman and make it luxury and wildly detailed and let the stay itself be the immersion. Add plot elements later

My recommendation is to start truly simply with like pork shabu shabu. Get the pork as thin-sliced as possible. Napa cabbage. Shiitake. Good dashi. A sudachi ponzu (try hirota). And rayu chile oil. Order as much of the condiments and dashi online as possible

The problem with Japanese cooking is that it’s not a day-of cuisine. Most flavoring is through fermentation etc meaning the ingredients are vital. Very hard to sub in American cousin ingredients. Even most Japanese markets stateside are subpar. If I make you miso soup here it works…even in LA? Meh
