colour later on there were some questionable ones but the original one was definitely Good actually even the one before the first Discworld book (Strata) wasn't a terrible Discworld book

I'd argue that in the first half-dozen Wyrd Sisters is the first one that's actually what would come to be known as a Discworld book. The ones before that are still finding their style.

Equal Rites, though with the caveat that Colour of Magic / The Light Fantastic are good books, just written before Pratchett knew what he wanted to do with Discworld

The Colour of Magic. I remember seeing guides to reading order all warning people away from starting with it, and I thought they smelled overcautious about not hooking new fans, so I tried it and liked it pretty well. I then read the first . . . 6 or 7, in publishing order? Liked them all.
