Finished the final muslin for the “old jeans made new” pants, turns out the correct adjustment was 0.5” additional width. Marked and cut the corduroy, pretty happy with the usage once I accounted for the nap of the fabric.

I got a personalized email calling me an anti semite for my phone calls saying “we shouldn’t give money and weapons to a sovereign foreign nation committing genocide” so that was fun. One of my favorite fusion recipes; take a chuck roast, prep it like you would pork butt for Carnitas, and add garlic, ginger and the masala for beef Nihari. I call it niharnitas; serve as tacos with fried onion crema and pickles turnips on flour tortillas/naan.

To griddle lavash gently/lightly place dough on hot surface, tryin to lay it flat /even. Try not to touch until bubbles start to form, when it will be more substantial. Usin tongs rotate/flip for even cook, about 2-4 mins total dependin on size/ heat. Serve hot, keep covered to avoid it drying out.

NOTE: To turn leftover lavash into crackers, tear or cut the lavash into chip-size pieces and place them in a single layer on a sheet pan. Brush the pieces with a little oil, sprinkle them with salt, and then toast them at 400°F [200°C] until golden brown and crispy, about 6 minutes.

Lightly oil a tray & place dough, ensuring the portions aren’t touching. Cover w/kitchen towel or plastic wrap lightly coated w/oil. Leave out for 1-1½ hours, or until puffy, or fridge for up to 3 days. If you fridge the dough, use plastic wrap to cover and expect it to take an hour or two to return

To shape the dough, cup the palm of your hand over one portion at a time and move your hand in a circle. The friction from the counter will help form the dough into a ball. If there is too much flour on the surface and the dough is sliding around, give the counter a spritz of water and try again.

Mix dough on med speed til dough releases from the side of the bowl w/o sticking & feels smooth to touch, ~ 4 min. Turn mixer off, move dough to the center of the bowl if it seems to get stuck on one side of the bowl. To knead by hand, dust the counter lightly with flour and place the dough on top.

I see this w/sewing sometimes & it confuses me; “if you make your own clothes to avoid exploitation I have bad news about your fabric and thread..” Like, okay, but _less_ unethical labor (cutting, sewing, etc) is still better than more? And it’s easier to research materials than whole garments? Idk.

Working on it! I’m currently hemming my own jeans and trousers and patching my own shirts at the elbows with success. I intend to learn to tailor sleeves but have not yet done so; if something doesn’t fit in the shoulders/torso I don’t buy it.
