Since autumn 🍂 began I’ve instituted soup Mondays & probably need some ideas! We’ve done Turkish Bride, pea & ham, leek & potato, French onion, minestrone, tomato & lentil, pumpkin, and bonne femme.
Sweetcorn with coconut milk and a smidge of green curry paste.
Fry an onion, fry off paste, add sweetcorn (fresh or frozen) and coconut milk - some water or stock. Peasy.
Soup here too. Pumpkin and kumara with melty leeks, bit of carrot, and using up the leftover broccoli from last night. Cumin and coriander and turmeric and a chilli garnish. 🤗
creamy chicken
chicken tortilla
chicken noodle
chilli (just make it soupy and serve it with cornbread, delish)
thai pumpkin
creamy brocolli and leek
leek and potato
load potato (bacon, cheddar, potato, green onion)
how many more do we need?
Maybe no one has yet recommended the Anna Jones Carrot and Tahini (which has a beautiful dash of orange in it)? It cures all the things, especially heavy hearts.
This was tonight - carrots roasted with loads of coriander and cumin and fennel seeds, then blended with yoghurt and lemon and some hot honey and fresh coriander and salt/pepper - plus yoghurt and some feta and ricotta. Delicious / sour and silky!
We do this one every winter. Substitute kumara for the sweet potato and it is lovely. The immersion blender makes things much easier. I've done it with a regular blender as well. This one is super filling. It freezes well. www.simplyrecipes.com/recipes/blac...
