Women in particular have our pain, fatigue, or cognitive symptoms brushed aside as “psychosomatic,” to be addressed with CBT. We’re supposed to just…convince ourselves we feel better. 3/4 (thread was shorter than I thought, actually!)

I know a few people who say they’ve been helped by it. That’s great; I’m delighted for them. But this modality is prescribed as THE GOLD STANDARD for every mental illness no matter how it presents, as well as for many “physical” symptoms (I don’t really grok the difference b/w mental & physical.)2/5

If you did use the cookie sheets, put parchment paper and the third cookie sheet over one of the finished pans. Press the cookie sheets together and flip them over. Remove the used cookie sheet and dislodge the bun pan as above. Repeat with the other pan using the now freed up cookie sheet. /15

If you did not use the cookie sheets place a heatproof plate over one pan. Hold plate and pan close together using potholders or oven mitts. Hold over a sink and turn it upside down. Put the plate down and push the inverted pan off the sticky buns using tongs or a knife. /14

Bake until Golden Brown and Delicious. If you wish to test with a probe thermometer, it should read around 180. Make sure you are poking in dough not caramel. Take pans out of the oven. Decant immediately. /13

Put one sticky bun pan into the center of one cookie sheet, then do the same with the second. Put them into the oven with one pan on a rack one slot above the center and the other below. Bake for twenty minutes then swap the pan positions. Pan above center becomes pan below etc /12

When both pans are prepped sprinkle any remaining cinnamon sugar on top. Yon can just bake the sticky buns by popping the pans into the oven, but… The following steps are not necessary but I find they reduce a lot of risk to the oven and the cook. /11

Press half of the cinnamon sugar mixture into the dough. Roll it up then cut into eighths. A pastry cutter is ideal for this step. Put the rolls into one of the pans with a spiral side down. Put them close to each other but leave room for rise. /10

Then sprinkle 1/2 to 1 cup sugar in each depending how sweet you like your caramel. Roll your dough out into an approximate rectangle. Cut the dough in half. Do the following steps with each half. Roll into a rectangle so that the dough is thinnish, but doesn’t tear if you poke it. /8

Preheat oven to 375F. Pan prep: I find two eight inch nonstick cake pans work well for this. I like to line them with parchment paper. In each pan smoosh down 1/2 to 1 stick of butter depending on how buttery you like your caramel. /7

2. Lamination. Roll out the dough and laminate in two sticks of butter as for Croissants or puff pastry. Using two double folds. There is no need to chill between foldings. Either way you now need to chill the dough for at least 2 hours. It can be chilled overnight. /5

Whisk in 1 cup warm water. Then whisk in 1 tablespoon or standard package of yeast and 1 1/2 teaspoon salt. Whisk or mix in 3 cups AP or pastry flour to make a sponge. Let rise 1 hour. The sponge will resemble unearthly terrain. Do not use it for RPG minis. /3

Dough: Melt one stick of butter in a sauce pan that you can easily pour from. If you wish and I usually do, add poppyseeds to the melting butter. Whisk four eggs in a large bowl or stand mixer bowl. Whisk in 1/2 cup sugar. Whisk in the butter in a slow smooth stream to avoid cooking the eggs. /2
