SYSL struck a great balance that I feel like you don't see often. A lot of Asian food is either self-consciously fusion-y and innovative or else it's straight "pick your protein, pick your sauce" stuff. SYSL had a viewpoint and a clear approach, but wasn't precious about it.

Wife and I were just at Bar La Grassa the other night (open 19 years) and I think it nails the mix of comfort and the food being legit outstanding. Too expensive to hit it up regularly, but always enjoy it. Marty's Deli here in NE is my most favorite recent addition to the neighborhood.

Our beloved Sen Yai Sen Lek closed after 14 years and it was a major blow. There seems to be less appetite for longevity and evolution and more for innovation and reinvention.

I will say that 25 years is a REALLY long time for a restaurant to exist in this day and age. There are obviously multiple factors that have influenced this, but I feel like more and more, restaurants open, get hot, and then the owners/chefs move on.

Seems like people generally are sick of a country that mostly kinda works. On either side, they feel like there are some OBVIOUS things that could make it better but on one side it's universal income and on the other it's murdering immigrants. And so it's just going to mostly stop working at all.
