SYSL struck a great balance that I feel like you don't see often. A lot of Asian food is either self-consciously fusion-y and innovative or else it's straight "pick your protein, pick your sauce" stuff. SYSL had a viewpoint and a clear approach, but wasn't precious about it.

Wife and I were just at Bar La Grassa the other night (open 19 years) and I think it nails the mix of comfort and the food being legit outstanding. Too expensive to hit it up regularly, but always enjoy it.

I will say that 25 years is a REALLY long time for a restaurant to exist in this day and age. There are obviously multiple factors that have influenced this, but I feel like more and more, restaurants open, get hot, and then the owners/chefs move on.
