This may help you out...
Motels have outside room entrances ("MOtor hoTEL").
Hotels have inside room entrances.
Some "proper" hotels have no food options (1-2 stars). Some have a snack area (2.5-3.5 stars). Some have restaurants (3.5+ stars). And some have room service (usually 4-5 stars).

Yes and no.
Some new brands, like Moxy, are bar-centric. As in, the check-in desk *IS* the bar; the person who gave me my room key also made me a cocktail.

It's a service level thing.
It took me years before I understood that "3 stars", "4 stars" aren't quality grades, but amenity/benefit/service indicators.
You need 4 star or above to get room service.

Nearly all have that option.
I was at a convention last year at a Sheraton, and we couldn't limit access to the hotel because they had like 10 rooms with ongoing contracts, people who had been staying there for multiple years.
Since then I ask about it and all have said they can do it.

Not only those places. Full on Sheratons will do yearslong guests, which I found out last year. We had a convention and couldn't sell out the hotel bc they had multiple guests with ongoing stays.
